MAMMA's SOUP
It's cold in winter outside and Mamma's Bean Soup is a double pleasure.
Full of flavor and velvety soft. As if an angel glides over your tongue.
This recipe is in honor of Mamma, a wonderful cook from whom I learned a lot. This brown bean soup is highly recommended and is super healthy, it contains several fibers, vitamins and proteins.
JENs Comfort food meal prep dish. Also ideal as a one-pan dish.
Under the guise of looking after the little ones and thus enjoying cost-effectively with XXL on the menu.
Prepare the dish in extra quantity. Save the extra made (cooled) in sealable container(s) for the next time day or in the freezer for a later time. Possibly combined with a JENs delicious recipe🍯. How nice is that!

◻︎Brown Beans 150 grams
◻︎Shank (ca. 1½ pounds)
◻︎Turnip ¼
◻︎Celeriac ¼
◻︎Roots 2x
◻︎White Parsley Roots 2x
◻︎Celery 5 sprigs
◻︎Chili peppers (small) 3x
◻︎Onion 1x
◻︎Tomato 1x
◻︎Garlic 2 cloves
◻︎Sea Salt 2 tsp.
◻︎Pepper 2 tsp.
◻︎Water (warm) 2x 500 ml. ◻︎Sunflower oil 1 tbsp.
◻︎Potatoes 2x
◻︎Bouillon cube 2x
◻︎Turmeric 1 tsp.
◻︎Nutmeg 1 tsp.
TOOLS
◻︎Pan
◻︎Cutting knife
◻︎Cutting board
◻︎Teaspoon
◻︎Stirring spoon
MISE en PLACE *Preparation brown Beans follow the instructions on packaging.
BROWN BEANS READY:
1) Season the shank only on the top with 1 tsp. sea salt and 1 tsp. pepper.
2) Wash & peel turnip, celeriac. Cut them into cubes.
3) Peel the Onion. Cut these into cubes.
4) Wash the Tomato. Cut these into cubes.
5) Peel and chop the garlic into large pieces.
6) Peel and coarsely chop the celery.
7) Peel and wash the potatoes. Cut them into cubes.
6) Place all ingredients clearly on the counter before use.
PHASE 1
◻︎Add 1 tbsp. salad oil in the pan. Turn the heat to medium-high. Oil at temperature.
◻︎Roast the shank for a few minutes on both sides.
◻︎Turn the shank over, with the seasoned side on top.
◻︎Leave the shank in the pan.
◻︎Then add 1x 500 ml. (warm) water into the pan. Turn heat low.
◻︎Let the mixture cook gently for 60 minutes, without the lid.
◻︎Turn the shank over to the other side.
◻︎Add 1x 500 ml. (warm) water.
◻︎Add the onions.
◻︎Add the stock cubes.
◻︎Add the garlic. Put a lid on the pan. Cook the whole thing for 30 minutes.
◻︎Remove the lid from the pan and add the tomato cubes.
◻︎Put the lid on the pan. Let it cook for 30 minutes.
PHASE 2
◻︎Lid of the pan. Remove the shank from the pan.
◻︎Add to the pan: all the carrots and celeriac.
◻︎Put the shank back in the pan, with the seasoned side on top.
◻︎Add the turnip. Turn the shank over.
◻︎Put the lid on. Let the soup simmer for 1 hour.
PHASE 3
◻︎Lid of the pan. Remove the shank and the meat from the bone.
◻︎Put the bone back in the pan.
◻︎Add the brown beans and 2x chili pepper (whole) to the pan. Stir gently.
◻︎Let the soup cook slowly.
◻︎Cut the meat into small pieces.
◻︎Season the meat with: 1 tsp. pepper, 1 tsp. turmeric, 1 tsp. nutmeg, 1 tsp. sea salt.
◻︎Add the seasoned meat to the pan.
◻︎Add the celery. Stir to mix.
◻︎Add 1x chili pepper (whole).
◻︎Put the lid on the pan. Let it cook for 30 minutes.
◻︎Remove the lid from the pan. Remove the bone from the pan. Stir gently to mix.
◻︎Put the bone back in the pan.
◻︎Add the cubes of potatoes to the pan. Lid on the pan.
◻︎Let it cook for 30 minutes. TURN OFF THE FIRE.
