◻︎Porkbelly 1 pound
◻︎Lard 2 tbsp.
◻︎2x 1 small Chili pepper
◻︎Onion 1x
◻︎Garlic 3 cloves
◻︎Ginger powder 1 tbsp.
◻︎Star anise 1x
◻︎Nutmeg 1 tsp.
◻︎Brown Sugar 1x1 + 1x2 tbsp.
◻︎Rice vinegar 2 tbsp.
◻︎Clove powder ½ tsp.
◻︎Sea salt 1 tsp.
◻︎Black Pepper ½ tsp.
◻︎Honey 1 tbsp.
◻︎Turmeric powder 1 tsp.
◻︎Beer 250 ml.
◻︎Bouillon cube (chicken) 1x
◻︎Water 400 ml.
◻︎Soy sauce 2 tbsp.

TOOLS

◻︎Wok
◻︎Peeler
◻︎Cutting knife
◻︎Cutting board
◻︎Teaspoon
◻︎Tablespoon
◻︎Stirring spoon

1. Fill a pan 1/2 with water and boil the water to temperature.
2. Place meat on belly side so that the skin remains 'dry'. Boil in water for 3 minutes.
3. Pat the meat dry.
4. Cut the meat into large blocks.
5. Coarsely chop the onion.
6. Cut garlic into coarse pieces.
7. Place everything clearly on the counter.

PREPARATION
◻︎Add 2 tbsp. Lard in the pan over medium heat, to temperature.
◻︎Add meat after the lard has melted.
◻︎Roast for 30 minutes. Stir occasionally.
◻︎Add 1 chili pepper. Stir to mix.
◻︎Swap the pan with the Wok on the heat, fill with meat without the fat.
◻︎Roast for 15 minutes. Stir occasionally.
◻︎Add the Onions.
◻︎Add the Garlic.
◻︎Add 1 tbsp. Ginger powder.
◻︎Add Star Anise.
◻︎Add 1 tsp. Nutmeg.
◻︎Stir 1 tsp. Sea salt.
◻︎Add ½ tsp. Black pepper.
◻︎Add 1 tbsp. Brown sugar. Stir to mix. 
◻︎Simmer for 15 minutes. Stir occasionally.
◻︎Add 2 tbsp. Rice vinegar.
◻︎Add 2 tbsp. Brown sugar. Stir to mix.
◻︎Add ½ tsp. Clove powder. Stir to mix.
◻︎Add 1 tbsp. Honey. Stir to mix.
◻︎Add 1 tsp. Turmeric. Stir to mix. Simmer for 15 minutes. Stir occasionally.
◻︎Add 250 ml. Beer.
◻︎Spread the Bouillon cube over it.
◻︎Add 400 ml. Water. Bring it to a boil.
◻︎Add 1 chili pepper. Stir to mix. Let it cook for 30 minutes.
◻︎Add 2 tbsp. Soy sauce. Stir to mix.
TURN THE HEAT LOW.
◻︎Simmer the whole thing for 1 hour. Let the sauce thicken. Stir occasionally.
◻︎The sauce has thickened.
◻︎TURN OFF THE HEAT. The BEERPORKBELLY is ready. SELAMAT MAKAN!
